To determine all existing practices and procedures in the area of Food Safety at your property. Identifies shortfalls and provides recommendations for improvement and training focus while assisting with compliance to local legislation and Environmental Health requirements.

An experienced and qualified member of Springboard Training & Development Centre will visit your site on a mutually agreed date to:

a) Become familiar with the building / facilities layout of the stores, kitchen(s), bar(s), dining room(s) and other associated food storage, preparation and service areas and to document the flow of food through the organisation.

b) Identify the relevant food storage, food preparation, pest control and personal hygiene equipment available for use e.g. freezers, refrigeration units, hand washing facilities, equipment and ware cleaning facilities, defrosting / thawing equipment, hot holding and cold holding equipment etc.

c) Meet with the Supervisors/Managers with responsibility for purchasing, receiving, food preparation (Executive or Sous Chef), Restaurant service and bar service, to review any existing food safety related practices and procedures in their respective areas (documented or undocumented.)

d) Produce a confidential report, for the client’s attention, identifying any gaps in the level of Food Safety practices and procedures at the client’s property, provide recommendations for improvement and to assist with compliance to local legislation and Environmental Health requirements. Finally the report and recommendations will provide a focus for staff training in the area of Food Safety and HACCP.
