– Dining Room cleanliness and sanitation

c) Flow of Food e.g.

– Purchasing of Food products
– Receiving of Food products
– Storage of Food products
– Thawing Food
– Preparing Cold Food
– Cooking Food
– Hot and Cold Holding of Food
– Cooling Food
– Reheating Food
– Service of Food

d) Food Safety Communications e.g.

– Responding to a Food Safety Complaint
– Managing Visitors to the Kitchen
– Responding to Food Safety in an Emergency Situation

e) Food Safety and HACCP Training and Monitoring e.g.

– New employee orientation
– Food Safety awareness and training for Line Staff

Four complete sets of the SOPs will be presented to the property in ring binders to facilitate the periodic review and update of each procedure.
